This series, all in very poor repair, were found in two 20th century parcels with various Buttery and Praeposter's Books. It is not clear who actually kept these books, which are in a variety of hands and vary from fairly written to very rough. Many cannot be dated accurately, since the year is rarely mentioned. Saints' Days are however sometimes given. Usually the most that can be done is to indicate a number of years in which a particular date fell on given day of the week. However, they do all appear to date from about 1520-1590, which is supported by the hands and the run of numerals. The title Kitchen Books is a modern invention; like the Cooks' Books they deal with meat and butter, but they cannot be said with certainty to be their direct ancestors.

Content description

They give on each page the daily expenditure on meat, poultry, butter, fish and occasionally pies for dinner and supper. This expenditure is further subdivided into groups, the letters M, C or G, P and S in the margin indication victuals for Magistri (i.e. the Fellows), Capellani, Commensales or possibly Generosi, Pueri and Serventes. There is sometimes a further subdivision for the Provost, and in some books the number of messes is also added in the margin. The day's total expenditure is given, with occasionally other items such as oxen or sheep presumably purchased on that day but not necessarily consumed then. Sometimes a week's total is added. These figures are usually in Roman numerals, but the day's total is frequently copied in Arabic numerals in a corner of the page, and Arabic numerals are sometimes found in the main account.
